Pumpkin Soufflé

For Thanksgiving this year, I really wanted to make a special breakfast on the morning my brother and his love flew in from out of state. Since Fall is the perfect time of year to celebrate the pumpkin, I opted for individual pumpkin soufflés! The recipe I used is from Epicurious. I followed the recipe exactly and actually made the base in advance so I only had to whip up my egg whites, fold them into the base, and bake them. We enjoyed them outside with champagne {of course} to celebrate their arrival.
