Pumpkin Muffins

Like any good scarf wearing, Pumpkin Spice Latte drinking, Fall loving girl, I have a slight pumpkin obsession. It is my sheer delight to share with you what is, in my opinion, the perfect Pumpkin Muffin recipe:

Equipment:
12 cupcake linkers
cupcake tin
mixer

Ingredients:
1.5 cups all purpose flour
1 teaspoon baking powder
.5 teaspoon baking soda
.5 teaspoon salt
1.25 cups sugar plus 1 tablespoon
1 teaspoon cinnamon
1 teaspoon allspice
2 large eggs
1/3 cup vegetable oil
1.5 cups solid-packed canned pumpkin

Preheat your oven to 350. Combine flour, baking soda, salt, allspice, and baking powder and set aside. Mix together pumpkin, eggs, oil. To the pumpkin mixture, add sugar and mix until combined. With the mixer on low, add in the flour mixture 1/3 at a time until just combined. Divide batter into each cupcake tin and fill 3/4 of the way full. In another small bowl, mix together 1 tablespoon of sugar and 1 teaspoon cinnamon. Sprinkle cinnamon-sugar mixture over each muffin. Pop into the oven for 22 minutes (give or take 2 minutes). Cool, eat, enjoy!
